Golden Phoenix Chicken Recipe

On my grocery rounds I chanced upon this sachet for preparing 'Phoenix Chicken'. I was contemplating Herbal Chicken but opted for this one as the Ingredients looked a bit intriguing.



What you need:

1 whole chicken/ whole thighs (your preference)
1 big Onion/ a bunch of shallots, all peeled
1 Orange, squeeze the juice on the chicken
4-5 cloves of garlic

aluminium foil to wrap chicken

This is the first time in my entire life steaming a whole chicken! After some time bickering at Tesco which chicken to buy, we got home, cleaned the chicken and started prepping only to realize the chicken was a bit too big to fit in my pot! Luckily we bought a roll of tin foil as the one provided in the Seasoning packet was probly meant for a Spring Chicken... Caution is needed when packing the chicken as some bones may stick out and puncture the pack which will leave all the delicious gravy leaking out from the bottom....

After much squishing and pressing we managed to tuck the entire foil package into the pot and steamed it for 2 hours... I was still scared if it would be half cooked...

Voila! Once we opened it, such an aroma wafted out of the foil...



The taste was really hard to describe. It was tasty no doubt, slight tangy with the sweetness of the caramelized onions. Gravy was superb after steamed for 2 hours and was like some herbal soup....
If you like your chicken springy and attached to the bone then you can steam it for only an hour & fifteen minutes. Any longer than that the chicken turns very tender and falls off the bones !

Also, the leftovers made lovely chicken sandwiches with butter and some salt (idea from my Dear). The gravy left overnight, turned into a thick gooeeyy jelly but it still tastes soo good .....

Looks great! Good job! I can probably make a vegetarian version, using soy "mutton" or soy "roast chicken"!
